About two weeks ago I posted a picture of my exquisite chorizo burger on Instagram and people went bonkers over it! It was definitely my first food picture to receive so much attention from my followers. (Definitely follow me on Instagram because I end up posting food pictures more quickly there than I post them on the blog). Days later I was still receiving comments! I couldn’t believe it. LOL This may sound lame to y’all, but it touched me. It was definitely a confidence booster and gave me more motivation to continually push out content that you all will enjoy!

Anyway, when I made that juicy chicken & turkey chorizo burger for dinner I wasn’t planning on blogging the recipe, but I was asked by a few people to post the recipe, so here we are. LOL Luckily I wrote down the ingredients and measurements because I’ve been “practicing” food blogging during my normal dinner preparations. I’ve never been a cook who measures ingredients so I am trying to get in the habit of measuring everything I do so I can share recipes with y’all. The only time I use measuring cups and spoons is when I am baking. So I have to practice to get the hang of measuring everything in the kitchen. Because I wasn’t planning on sharing the recipe on the blog I didn’t take many pictures and I definitely didn’t pull out my HDSLR camera. Forgive me!

Reasoning Behind This Chorizo Burger

The inspiration for this recipe comes from my craving for chorizo sausage. If you’ve never tried chorizo it is traditionally made with pork, red pepper, chili powder, paprika, and other spices. You guys know I usually buy chicken sausage so I used chicken chorizo instead of pork! I didn’t have enough chicken chorizo to make burgers so I added a pound of ground turkey and seasoned the mixture with some smoked sea salt, cumin, ancho chili powder, garlic powder, cayenne and black pepper. Now about the roasted tomatoes you see on the burger, that idea came from me having just bought some organic yellow tomatoes from Whole Foods Market. As soon as I cut into the tomato, juice streamed everywhere. I knew I didn’t want a juicy slice of tomato on this burger so I decided to roast the tomato slices in the oven with some garlic, olive oil, salt, pepper and Italian seasoning. The tomato slices slightly dried up and the flavor became super concentrated! For the cheese I didn’t want plain old sliced cheese to top my burger with, I wanted a cheesy sauce so I made Mornay sauce which is a Béchamel sauce with cheese added in. Mornay sauce with smoked gouda is THE BOMB, I’ve made it a few times before and knew it would perfectly compliment the chorizo burger.

Buns! I almost forgot to tell you guys about the buns! I made them from scratch. Here’s the recipe I used from Just a Taste. The only amendment I made to the hamburger buns recipe is adding herbs – Italian seasoning to be exact. I added about 1 teaspoon of Italian seasoning. I absolutely loved the flavor of the buns! My buns didn’t puff up enough so I think I should have let them rise some more. Now when you make this burger recipe you do not have to make homemade hamburger buns like I did, you can use store bought buns. I love baking so that’s why I made my own.

This burger is EVERYTHING! I’m not trying to brag, but you are going to crave this burger once you’ve tried it. It’s a bit sloppy, yet so satisfying! I would suggest serving this burger with fries so you can dip them in the Mornay sauce that oozes from the burger…you’ll basically be eating cheese fries! Get ready to head to the store and buy the ingredients to make this tantalizing burger.

Instructions
  1. Roasted tomatoes: Preheat oven to 400° F. In a shallow glass baking dish add tomato slices then drizzle olive oil on top. Sprinkle salt, black pepper, half of the garlic, and Italian seasoning onto tomato slices. Massage gently. Flip tomato slices over and drizzle more olive oil, salt, black pepper, the remaining garlic, and Italian seasoning. Place baking dish into oven and roast tomatoes for 30 minutes, flipping halfway through cooking time. Tomatoes will shrink and lose some moisture when they are done. Remove from oven.
  2. Burgers: Start mixing burgers while the tomatoes roast in the oven. In a bowl add chicken chorizo, ground turkey, and all of the seasonings. Mix gently. Do not overwork the meat. Form into 4 patties and place the patties on a sheet of parchment paper. Cut around the patties to have 4 pieces of parchment paper with patties on top. Preheat a cast iron grill pan over medium heat, spray with oil. Cook the burgers for 3 mins on one side and 2 minutes on the other side.
  3. Mornay Sauce: (While burgers are cooking prepare the Mornay sauce). Melt butter in a medium saucepan over medium heat. Add in the flour and cook for 2 minutes stirring constantly. Whisk in the milk in ½ cup increments until fully incorporated into the roux mixture. Season the sauce with salt, white pepper, nutmeg, and cayenne. Stir constantly for 4-6 minutes while mixture is cooking. Remove the pan from the heat and whisk in the cheese. Serve immediately.
Recipe Notes

Notes: If Mornay sauce congeals too much just place the pot back on the stove to heat it up. Stir until the sauce loosens up.
