Cherry season will be shortly coming to an end and I’m a little heartbroken about it. 🙁 Ugh! But what better way is there to end the cherry season than with this Spiced Cherry Glazed Salmon recipe using my Spiced Cherry Glaze. I told y’all that glaze was extremely versatile! This Spiced Cherry Glazed Salmon only calls for 4 ingredients. THAT’S IT! You’ll only need some sea salt, black pepper, harissa spice and some of the prepared Spiced Cherry Glaze. I’m sure you’ll still have a little glaze in the fridge leftover from making my Spicy Cherry Glazed Chicken Wings. So you’re literally THAT much closer to having this deliciousness on your plate in under 20 minutes.

Tips to Make the Spiced Cherry Glazed Salmon

The biggest tip I have for this Spiced Cherry Glazed Salmon, and also the longest step in making this recipe, is to brine the salmon before cooking it. You will want to brine the salmon to increase the moisture and reduce the presence of albumin, which is the unappealing white gunk, that you sometimes see on the surface of cooked fish. Albumin is protein so it’s nothing to be wary about, you just don’t want to see it oozing out of your fish. Eww! LOL

According to Cook’s Illustrated, you’ll want to use 1 tablespoon of salt for every cup of cold water and brine the fish for at least 10 minutes, which is exactly what I did. They said the “salt partially dissolves the muscle fibers near the surface of the flesh, so that when cooked they congeal without contracting and squeezing out albumin.”

After the salmon (we are using wild salmon of course) has brined you want to pat them dry. I mean DRY! LOL You want the salmon dry so the seasoning will adhere and you will be able to create a nice crust when pan searing it. Go ahead and sprinkle the seasoning like Salt Bae, I know you want to! *insert wink face* Salt Bae’s sprinkling technique shouldn’t just be a fad; it should be used because it’s the best way to ensure that the seasoning is dispersed evenly on your food. Just maybe don’t be as dramatic as him. LOL So sprinkle from high up, y’all!

A few other tips I have are to 1. Do not place the salmon into a cold pan. When the oil is almost smoking go ahead and add your fish. 2. Place the salmon skin side down. 3. Do NOT touch the fish after placing it into the pan. Only move it when it is ready to flip after about 4 minutes.  Oh, and one tip about the glaze is to make sure it’s warm before brushing it on the fish. Also, do not add the glaze until the fish is almost finished cooking.

Instructions
  1. In a large bowl or baking dish add cold water and stir in the sea salt, mix until the salt is fully dissolved. Add in salmon filets and allow the salmon to brine for at least 10 minutes. After the salmon has finished brining, remove from the solution and pat both sides DRY with a few paper towels. Transfer the salmon to a cutting board.
  2. In a small bowl, whisk together the sea salt, black pepper, and harissa spice. Sprinkle the seasonings generously over the salmon filets.
  3. Heat the olive oil in a large cast iron skillet set over medium high heat. Once the oil is hot, add the salmon skin side down and cook for 4 minutes. After 4 minutes, reduce the heat to medium and flip over the salmon and continue to cook for 3 minutes. After the 3 minutes, flip the fish back over and spoon or brush the Spiced Cherry Glaze over the salmon. Remove the salmon from the pan and serve.
